
Ombre Berry Popsicles

While you could blend everything together and freeze it in one go, it only takes a little extra effort to create these berry beauties—layered from bold to creamy—that are just as fun to look at as they are delicious to eat.
Ingredients
- 1/2 cup granulated sugar
- 1/2 teaspoon kosher salt
- 2 cups berries (frozen or fresh)
- 1/2 teaspoon lemon juice
- 1 cup plus 1 tablespoon plain Greek yogurt (divided use)
- 3 tablespoons heavy cream (divided use)
Directions
- In a small saucepan, gently stir together sugar, salt, and 1/2 cup water. Cook over medium heat until sugar and salt have dissolved, about 2 minutes. Transfer syrup to a glass measuring cup. Reserve pot.
- Place frozen berries in pot. Drizzle with 1/2 cup syrup. Set remaining syrup aside. Stir berries and cook over medium heat until berries are soft, 2 to 3 minutes. Stir in lemon juice.
- Transfer mixture to a blender and puree until smooth. If using fresh berries, simply blend with syrup and omit heating. To remove seeds, press through a sieve (optional, but recommended). You should have almost a cup of strained puree.
- Mix 1/2 cup puree with 1/4 cup water. Carefully pour about two tablespoons mixture into each popsicle mold. This will be your darkest layer. Freeze until firm, about 30 minutes.
- Meanwhile, take out two small bowls. To each bowl add: 1/2 cup yogurt, 2 tablespoons syrup, and 2 tablespoons heavy cream. To one bowl, stir in 1 teaspoon puree. To the other bowl, stir in 4 teaspoons puree. Store both bowls in the fridge until ready to use.
- To the remaining fruit puree add: 2 tablespoons yogurt, 1 tablespoon heavy cream, remaining syrup, and 1/4 cup water. Stir to combine. Once the first popsicle layer is firm, use this mixture to add a second layer. Freeze an additional 20 minutes or until firm.
- Pour the next darkest yogurt-berry mixture over the frozen layer in each mold. Freeze for 20 minutes. Repeat with the lightest, remaining mixture. Add popsicle sticks and freeze until solid.
